Ingredients
- 1/4 cup diced onion
- 1 clove garlic minced
- 1 Tablespoon butter margarine can be used, but butter is best
- 1 Tblespoon all-purpose flour
- 1 1/4 cups fat-free half-and-half full fat can be used if desired
- 4 ounces fat-free cream cheese cubed, full fat can be used if desired
- 3/4 teaspoon Salt adjust as desired
- 1/8 teaspoon ground nutmeg
- 1/8 teaspoon ground black pepper
- 1/2 cup bacon pieces fried and drained - adjust amount as desired
- 1/4 cup Parmesan cheese grated or shredded - block is best - coat grater with cooking oil first and the cheese will not stick
- 1 pkg. 16 oz. thawed and squeezed dry a potato ricer works well for this, or press firmly in a drainer or colander
- 1 Tablespoon shredded Parmesan cheese This is for topping garnish

Instructions
- In a large nonstick skillet (fry pan) saute onion and garlic in butter until tender. Stir in flour until blended. Gradually whisk in half-and-half until blended. Bring to a boil over medium-low heat; cook and stir for 2 mintues or until slightly thickened. Add the cream cheese, salt, nutmeg, bacon and pepper, stirring until cream cheese is melted. Stir in spinach and 1/4 cup Parmesan cheese; heat through. Sprinkle with remaining Parmesan cheese. Serve immediately.
