Prick the skin with a fork and squeeze out what you need. Wrap the lemon in plastic wrap and refrigerate until you need it again. Alternate method: Squeeze all the juice out of the lemon and freeze it in ice cube trays or small containers like 2 oz. midgets from Tupperware and you can take out as much as you need and it will keep longer. Remember if the lemon is room temperature (can be warmed in a pan of warm water) and roll it on a surface until it feel like a soft ball, it will yield up to 50% more juice.
