Country Scalloped Turnips
6 medium Turnips, divided
2 Green onions with tops, chopped, divided
2 Tablespoons Flour, divided
1 cup Half-and-Half
To taste Salt and Pepper
2 Tablespoons Minced Fresh dill or
1 teaspoon Dried dill
3/4 cup Grated Muenster cheese
Peel turnips, grate or slice thin. Grease baking dish. Layer 1/2 of turnips in dish, sprinkle with 1/2 of green onions and 1 tablespoon flour. Repeat layers.
Pour half-and-half over turnips. Sprinkle with a little salt and pepper and fresh minced dill. Top with grated cheese.
Cover with foil and bake in 350 oven for 20 minutes. Remove foil and bake uncovered for 10 to 12 minutes, until tender, and cheese is light golden color.
Serves: 6 to 8
TURNIPS WITH CREAM SAUCE
5 to 6 Turnips, peeled and cubed
Cook turnips in 1 inch of water until fork tender. Drain and reserve water for sauce.
Sauce:
1 Tablespoon Butter
1 Tablespoon Flour
3/4 cup Milk
1/4 cup Turnip broth
1 Tablespoon Minced fresh dill
To taste Salt and Pepper
Melt butter in saucepan, add flour and cook about 1 minute. Add milk and turnip water gradually, stirring constantly. Add seasonings and continue cooking over low heat until sauce thickens. Pour over turnips and stir gently.
Serves 5 to 6
Variations
To sauce, add 1/4 teaspoon ginger instead of dill and pepper.
