Easy Peeling of Red Beets – Prevent "Bleeding" of Red Beets

To peel red beets easily, wash, remove leaves, but do not pierce the skin of the red beet. Place in a kettle of water (covering beets with water). Cook until beets are tender or skins slip off easily, (test with a fork to see if the fork will push off a part of the skin easily-depending on the size of the beets, will vary on the time to cook – 20 – 45 minutes). Leave on the root end and the leafy top. Leaving on the ends and not piercing the skin before cooking, will help the beet from losing it's color (will still lose some, but not as much), and both the root and stemmy top will push off easily when you slide off the peel. Discard the cooking water. Beet juice can be used for making wonderful jelly by adding jell-o. You can not tell it from cherry jelly, however, it will have much more nutrition than regualr jelly.

Preserve Applesauce Color

To keep your applesauce from turning dark colored, add a bit (maybe 1 teaspoon) of lemon juice per quart of homemade applesauce. Lemon juice is a natural bleach for foods.

Cupcake Packing and Nutrition Tip

If your cupcakes will be packed for lunches, picnics or other “on the go” eating, cut the cupcake in half and put the frosting between the two halves and put the cupcake together again (like a sandwich with thr frosting in the middle). The frosting will be be stuck to the wrapper or container that it was packaged in before leaving home. For variety, instead of using frosting, use peanut butter, jam/jelly, or a combination of both, or marshmallow fluff. The peanut butter has more protein than frosting and the marshmallow fluff has fewer calories. The jam will help keep the cupcake moist and will add flavor.

Hot Peppers – Put out the "fire"

If you have eaten something with a very hot pepper product in it, coat your tongue or what ever is burning, with milk or dip it (moisten the skin or tongue, etc.)in salt to put out the “fire”.

Testing the Temperature of Outdoor Grills

Check the temperature of your grill by cautiously holding the palm of your hand near the grate at the cooking level. Count the number of seconds that you can hold your hand in that position befoe the heat forces you to pull it away. About 4 seconds is recommended for medium heat.

Chili Corn in Husks

Trim ends off of eight large ears of unhusked corn. Remove about half of the husks. Push the remaining husks aside and remove corn silk. Replace husks and tie into place. Put ears on a rack in a large covered kettle. Add 2 cups water, cover and steam for 20 minutes or until corn is tender. Remove husks. Heat 1/2 cup butter and 2-3 teaspoons of chili powder; brush on corn just before serving.
