FRESH MOZZARELLA FRUIT SALAD
1 pkg. (4.4 oz.) Fresh blueberries
8 oz. Fresh strawberries
1 tub or 8 oz. ball Fresh mozzarella
3 Tbl. or as desired Fresh mint
1/4 cup Chopped pecans
3 Tbl. or as desired Honey
Prepare fruit and mint, combine and add cheese and mix lightly. Just before serving, top with honey and stir lightly to coat fruit and cheese, top with chopped pecans.
TIP: Place small dish upside down at the bottom of the bowl to keep the salad from sitting in liquid. The liquid will be captured under the inverted dish and will make your bowl look fuller and it will also support the salad out of the liquid.

Fresh Mozzarella Fruit Salad

GRILLED GORGONZOLA-BASIL BURGERS
1/2 of Recipe RECIPE
1 lb. 2 lbs. Ground sirloin or extra lean beef
1 Tbl. 2 Tbl. Minced garlic
1/8 tsp. ¼ tsp. Onion powder
1 pkg. 2 (4 oz.) pkgs. Crumbled Gorgonzola cheese
¼ cup ½ cup Fresh basil leaves, chopped
To taste To taste Salt
To taste To taste Black pepper
Oil for frying
Circuillon grill
Preheat an outdoor grill (or for indoor preparation, heat frying pan with a bit of oil) for medium-high heat. Lightly oil grill grate, and place about 4 inches from heat source.
Mix the ground sirloin, garlic, onion powder, gorgonzola cheese, and basil together in a large bowl until evenly blended. Divide mixture evenly to form 8 patties.
Cook patties on preheated grill (or in frying pan) until meat is evenly browned and center is no longer pink, about 5 minutes on each side.
Yield: 8 small 8 large servings (burgers)

If you are finding that your cakes have holes in them, it is very likely due to not distributing the baking powder or baking soda evenly. Sift your dry ingredients to avoid this, or if you do not have a sifter, be sure to beat with a beater instead of stirring (if your recipe will allow this much mixing – if not, be sure to sift them with a sifter). Small lumps of a rising ingredient in your batter will cause the holes, as this is where it is putting the “push” in the rising process.

Wash: Put pillows in the washing machine on the gentle cycle with a mild detergent like Woolite. (Don't wring – you'll just misshape them.)
Dry:Put the pillows in the dryer. Put clean tennis balls with them to plump them back up.

No Bake Peanutty Graham Treats
1/2 cup Peanut butter
1 (12 oz.) box Honey graham cereal
1/2 cup Butter
1/2 cup Honey
1 bag (16 oz.) Mini marshmallows
Spray a 9X13″ baking pan with nonstick spray; set aside.
Melt peanut butter, butter and marshmallows in saucepan (kettle) over medium heat, stirring until smooth. Stir in the honey. Remove from heat; stir in honey graham cereal.
Press mixture evenly into the prepared pan with greased spatula. Allow to cool; cut into squares to serve.
Yield depends on the size of bars you cut.

Refrigerating potatoes will lengthen their storage life and reduce chances of sprouting, but the natural starches change into sugars and will make the potatoes become grey when cooked or fried. Always rinse potatoes after slicing or shredding when making potatoe pancakes or scalloped potatoes, to save them from turning grey in this use also.

6 slices Bacon, fried and crumbled
3 slices (1 oz. each) Cheese
8 Eggs, beaten
To taste White or black pepper
3/4 cup Milk
Fry bacon until crisp; drain and crumble. Preheat oven to 350 degrees. Lay cheese slices in bottom of greased 9″ baking dish. Beat eggs with milk, add pepper and bacon. Pour over cheese slices. Bake for 35 to 40 minutes. Let stand 5 minutes before serving.

Bacon and Egg Oven Omelet

1/3 cup Butter or margarine, softened (I prefer butter)
1/3 cup Water (I use milk)
1 cup Peeled, chopped into medium sized pieces, *peaches (Iused canned)
1/2 teaspoon Salt
1 cup Granulated sugar
1 teaspoon Vanilla extract
1 2/3 cup All purpose flour
1/4 teaspoon Baking powder
2 Eggs
1/8 teaspoon Almond extract
1 teaspoon Baking soda
1/2 cup Chopped pecans
Toping:
2 Tablespoons or more Chopped pecans
2 Tablespoons Brown sugar
In mixing bowl, cream butter and sugar. Add eggs,one at a time, beating well after each addition. Beat in water (milk) and vanilla and almond extracts. Stir in peaches. Combine flour, baking soda, salt and baking powder; gradually add to creamed mixture. Stir in pecans. Pour into greased bottom of 9x5x3″ loaf pan. Combine topping ingredients; sprinkle over batter. Bake at 350 degrees for 50 to 55 minutes or until toothpick inserted near center comes out clean. Cool for 10 minutes before removing from pan to wire rack to cool.
* Variety: One time I made it I used 1/2 each canned and drained, chopped peaches and pears and made into muffins and it was also very well liked. If making muffine, spray insides of paper liners with oil and it is easier to serve and clean the muffin pan.

Peach Cobbler Bread

Crispy Kale Chips
Oil spray (recommended: canola or olive oil)
1 large bunch kale
Kosher salt
Optional: Garlic or onion powder
Preheat the oven to 400 degrees. Coat two large baking sheets with oil spray. (The chips will be crispiest if baked directly on the baking sheet, without aluminum foil.)
Trim the ends off the kale and cut the leaves into 2-inch pieces. Divide the kale pieces between the two baking sheets and spread them into a single, even layer. Liberally mist the kale with oil spray and lightly sprinkle with salt (and garlic or onion powder if desired). Bake for 10 minutes, or until the kale is crispy to the touch and the edges are beginning to brown.
