Panko Bread Crumbs

Panko (means “bread bits”) bread crumbs are made from bread that's especially formulated to absorb less oil. So when you coat food with panko and then pan-fry it, the coating stays extra-crispy and doesn't get soggy.

End Soap Scum on Shower Doors

Used fabric softener sheets are great for removing soapy residue from glass shower doors. Sprinkle a few drops of water on the sheet and clean the doors.

Country Scalloped Turnips – TURNIPS WITH CREAM SAUCE

Country Scalloped Turnips

6 medium Turnips, divided
2 Green onions with tops, chopped, divided
2 Tablespoons Flour, divided
1 cup Half-and-Half
To taste Salt and Pepper
2 Tablespoons Minced Fresh dill or
1 teaspoon Dried dill
3/4 cup Grated Muenster cheese

Peel turnips, grate or slice thin. Grease baking dish. Layer 1/2 of turnips in dish, sprinkle with 1/2 of green onions and 1 tablespoon flour. Repeat layers.

Pour half-and-half over turnips. Sprinkle with a little salt and pepper and fresh minced dill. Top with grated cheese.

Cover with foil and bake in 350 oven for 20 minutes. Remove foil and bake uncovered for 10 to 12 minutes, until tender, and cheese is light golden color.

Serves: 6 to 8

TURNIPS WITH CREAM SAUCE

5 to 6 Turnips, peeled and cubed
Cook turnips in 1 inch of water until fork tender. Drain and reserve water for sauce.

Sauce:
1 Tablespoon Butter
1 Tablespoon Flour
3/4 cup Milk
1/4 cup Turnip broth
1 Tablespoon Minced fresh dill
To taste Salt and Pepper

Melt butter in saucepan, add flour and cook about 1 minute. Add milk and turnip water gradually, stirring constantly. Add seasonings and continue cooking over low heat until sauce thickens. Pour over turnips and stir gently.

Serves 5 to 6

Variations
To sauce, add 1/4 teaspoon ginger instead of dill and pepper.

PEANUT BUTTER-PINEAPPLE CELERY STICKS

1/2 cup Low-fat (1%) cottage cheese
1/2 cup Reduced-fat peanut butter
1/2 cup Crushed pineapple in juice, drained
12 (3-inch-long) Celery sticks
Combine cottage cheese and peanut butter in food processor. Blend until smooth. Stir in pineapple. Stuff celery sticks with mixture.

Yield: 4 Servings

Dietary Exchanges: 1 lean meat, 1 fruit, 2 fat
Nutritional information per serving: Cal: 212, Cal from fat: 42%, Total fat: 10g, Sat fat: 2 g, Carb: 17g, Protein: 11g, Chol: 1mg, Sodium: 250mg, Fiber 3g.

Lydia's Date Nut Krispie Bars

LYDIA’S DATE NUT KRISPIES BARS

3 Tablespoons Butter (do not substitute)
10 oz. Marshmallows
8 oz. Dates, pitted and chopped (can use the pre-chopped version for ease in preparation)
Optional: ½ cup Almonds ground or pecans chopped small or ground
1 teaspoon Vanilla extract
6 cups Rice cereal (Kellogg’s Rice Krispies is the brand I use)

Spray baking pan with cooking spray. 9”x13”x2” for a thicker bar or 10”x15”x1” for a thinner bar.

In a large kettle, melt together the butter, marshmallows and dates, stirring often. Add vanilla extract and mix well. Add cereal and nuts, mix until all is coated. Remove from heat and spread in prepared pan. Tip: if you spray your hands generously with cooking spray, the mixture does not stick to your hands.

Cool in the refrigerator until set. Cut and enjoy. These bars can be stored at room temperature once set. They are easier to cut at room temperature.

I created this to make a healthier and more flavorful version of the standard Rice Krispies Bar, with the added dates and nuts.

MEDITERRANEAN TUNA LETTUCE SALAD

MEDITERRANEAN TUNA LETTUCE SALAD

8 oz. Green beans, ends trimmed or frozen cooked slightly, cooled
2 bags (8 oz. ea.) Mediterranean salad greens or other lettuce greens
2 Cucumbers, peeled, halved, seeded and sliced
1 pt. Grape tomatoes
1 can (12 oz.) Chunk light tuna in oil, drained
12 Mixed Kalamata olives
1/2 cup Greek salad dressing
1/2 cup Crumbled basil-and tomato-feta cheese

Cook green beans in water to cover, or steam 7 to 8 minutes just until crisp-tender. Drain well.

Empty the salad greens into a large bowl. Toss together with vegetables, tuna, olives, dressing and cheese.

Nutritional information per serving (using pre-bottled dressing)
385 cal; 25g protein; 40g carbohydrates; 6g fiber; 25g fat;(5g sat. fat); 50mg cholesterol

Caramel Apple Burritos

3 large Tart apples, peeled and sliced
10 Caramels
5 Flour tortillas (8″), warmed
Place apple slices in a saucepan; cover and cook over medium heat for 3-4 minutes or until tender. Reduce heat. Add caramels; cook and stir until caramels are melted. Spoon mixture off center on each tortillas; fold sides and ends over filling and roll up.

Leftover Pancake Breakfast Sandwich for One

1 Egg
1 slice Cheddar cheese
1 slice Ham
2 Tablespoons Maple syrup
2 Leftover buttermilk pancakes
Heat frying pan over medium heat and lightly spray with cooking spray. Crack egg into pan and break yolk. Cook to desired firmness. Warm sliced ham in pan while assembling sandwich. Toast pancakes in toaster and place one on plate. Place egg on top. Pour 1 Tablespoon syrup over egg. Layer cheese, ham and other pancake. Pour remaining syrup over top of sandwich.

Simple Smoothie

8 medium Strawberries, washed, with stems removed
2 teaspoons Granulated sugar
1/2 teaspoon Vanilla extract
1 cup Milk, or enough to cover the berries in the blender (whole milk makes a creamer smoothie)
Place all ingredients in blender. Puree about 1 minute or until smooth.
Pour into a glass.
Makes 1 serving.

No more slipping rugs/mats

To keep floor mats in place, apply silicone caulking =to the backs. Start with a line along the edge, then repeat every 2″ until you reach the middle. Spread flat with a putty knife and let dry as directed.
