Fruit Smoothies for One to Three

Mixed Berry Delight
1 cup nonfat strawberry yogurt
1/2 cup cranberry juice
1 & 1/2 cups frozen strawberries
1 cup fresh raspberries
Combine in a blender and puree until smooth.
4 servings, 6 oz. each
1 serving contains 100 calories

Creamy Peach Smoothie
1 cup nonfat vanilla yogurt
1 cup frozen peaches
1/2 tsp. vanilla extract
Combine in a blender and puree until smooth, adding milk to desired consistency.
Optional: garnish with peach slice and mint leaves
2 servings, approx. 8 oz. each
1 serving contains 130 calories

Banana Cocoa Smoothie
1 cup nonfat vanilla yogurt
3/4 cup skim milk
1 medium ripe banana, frozen and cut into chunks
3 T. sugar-free chocolate drink mix
1/4 tsp. vanilla extract
Optional: sprinkle chocolate milk powder on top for garnish
Combine in a blender and puree until smooth.
Serves 3, 8 oz. each

Country Style Potato Pancakes for Two or Four Servings

2 Servings 4 Servings
1 Egg 2 Eggs, slightly beaten
1 2 Large poatoes, washed, peeled, and grated, rinsed and drained well
1 2 Medium onions, grated
2 1/4 teaspoons 1 1/2 Tablespoons All-purpose flour
1/2 teaspoon 1 teaspoon Baking powder
1 1/2 teaspoon 1 Tablespoon Chopped parsley
1/2 teaspoon Salt
1/4 teaspoon White pepper

Combine all ingredients in large bowl; mix well. Form potato mixture into 4 or 8 patties. Lightly grease large skillet. Add pattties and cook on moderate heat 4 minutes, or until golden brown. Turn and cook 4 or 5 minutes, or until potatoes are cooked and pancakes are golden brown. Serve hot; pass maple syrup or applesauce, if desired

Potato Stuffing for Two or Four

2 Cups 4 Cups

1 cup 2 cups Mashed potatoes
1/2 cup 1 cup Coarse dry bread crumbs
1/4 cup 1/2 cup Celery, chopped
2 Tbl. 1/4 cup Onion, chopped
2 Tbl. 4 Tablespoons Butter
1 Tbl. 2 Tablespoons Onion juice
1/2 tsp. 1 teaspoon Sage
1/4 tsp. 1/2 teaspoon Summer savory
1/4 tsp. 1/2 teaspoon Salt
1/4 tsp. 1/2 teaspoon Black pepper, ground

Combine all ingredients in large bowl; blend thoroughly with spoon. To serve as a side dish, preheat oven to 350 degrees. Butter a 2-quart casserole. Spoon mixture into prepared casserole. Bake 1 hour, or until heated through. To stuff goose, duck or roasting chicken, lightly spoon stuffing into cavity. Bake as directed for individual bird.

Shepherd's Pie for Two

Shepherd's Pie for Two

1 cup Leftover mashed potatoes
3/4 cup Cubed cooked roast beef
1 cup Frozen mixed vegetables, thawed
2 Tablespoons Chopped onion
1/2 cup Beef gravy, divided
2 Tablespoons Grated Parmesan cheese
2 Tablespoons minced parsley

Preheat oven to 350 degrees. Grease 2 small casseroles. Divide mashed potates into prepared casseroles. Spread evenly over bottom and sides. Combine beef, vegetables, and onion in small bowl; mix lightly. Spoon over potatoes. Top each with half of the gravy. Sprinkle with Parmesan cheese and parsley. Bake 20 minutes or until heated through.
To prepare this recipe in a microwave oven, place 1 teaspoon butter and onion in 1-cup glass measure. Cook on High 1 mintue or until onion is transparent. Combine ingredients as directed above, using individual approved microwave casseroles. Cover with waxed paper. Cook on High 5 to 6 minutes, or until heated through.

Tasty Parmesan French Toast for Two

1 Large egg
1/3 cup Milk
1/8 teaspoon Salt
To taste Freshly ground black pepper
Tiny pinch Cayenne pepper
1/4 cup plus 3 Tablespoons Grated Parmigiano Reggiano cheese
2 (1 1/2″ thick) slices mild, airy, slightly chewy bread (about 1 1/8 oz. ea.) such as ciabatta or pullman loaf
2 teaspoons Canola or olive oil

In a shallow pan large enough to hold bread slices, combine egg, milk, salt and pepper, cayenne and grated cheese. Stir with a fork until thoroughly combined. Arrange bread in batter and poke holes in it with a fork to help it absorb liquid. Let soak several minutes then carefully flip slices to coat other side; poke more holes and let soak 2 to 3 minutes longer. Continue flipping and soaking until almost all custard is absorbed (cheese will form a coating on outside of bread).

Heat a 10-inch non-stick skillet over moderately high heat. Add half of the oil and swirl to coat pan. When pan is hot, carefully place soaked bread slices into pan. (Once you place bread slices into pan do not move it or you will disturb the coating.) Lower heat slightly. When underside is deep brown and releases easily from pan, after about 3 minutes, turn slices over with a metal spatula, adding remaining oil to pan as you lift each one to flip it. Cook until underside is deep brown, 2 or 3 minutes longer. Serve at once.

Healthy Pumpkin Dip

1 Tablespoon Canned pumpkin (not pie filling with spices, etc.)
1/3 cup Low-fat vanilla yogurt
1 teaspoon Orange juice concentrate
Optional Pinch of Cinnamon
Optional 1 teaspoon Maple syrup
Graham crackers for dipping

Mix all ingredients well. Serve cold or warm. (To warm, microwave for about 30 seconds and stir before serving.)

1/3 cup 2/3 cup Semisweet chocolate chips
½ cup 1 cup Half-and-half
1 2 Egg(s)
4 ½ teaspoons 3 Tablespoons Granulated sugar
Pinch Dash Salt
2 ¼ teaspoons 1 ½ Tablespoons Rum, if desired
Heat oven to 350°.
Heat chocolate chips and half-and-half, stirring constantly, until chocolate is melted and mixture is smooth. Cool slightly. Beat remaining ingredients; stir gradually into chocolate mixture. Pour into 4 (2) ungreased 6-ounce custard cups or 4 to 5 (2-3) ovenproof pot de crème cups.
Place cups in baking pan on oven rack. Pour boiling water into pan to within ½ inch of tops of cups. Bake 20 minutes. Cool slightly, cover and chill at least 4 hours.
Store no longer than 24 hours.
Yield: 2 to 4 servings

1 pkg. (3 oz.) Cream cheese, softened
4 tsp. Instant cappuccino powder or other flavored sweetened instant coffee powder
2 tsps. Sugar
1 cup Whipped topping (like Cool Whip)
2 slices* Pound cake, cut into cubes
1/4 cup Semisweet chocolate chips
Optional: Additional whipped topping and chocolate chips,
2 Dessert dishes

*Pound cake can be purchased by the slice in a Deli salad bar

In a mixing bowl, beat cream cheese, coffee powder and sugar until smooth.

Beat in whipped topping until blended.

Divide cake cubes between two dessert dishes; top with cream cheese mixture and chocolate chips.

Garnish with additional whipped topping and chocolate chips if desired.

SAVE THE DAY SOUP – Make ahead and freeze if desired

SAVE-THE-DAY SOUP

RECIPE 1/2 RECIPE
6 cups 3 cups Chopped broccoli
6 cups 3 cups Chopped cauliflower
4 2 Celery ribs with leaves, cut into 1-inch pieces
3 1 1/2 Medium carrots, cut into chunks
1 1/2 Medium onion, cut into chunks
2 cans (14 1/2 oz. each) 1 can Chicken broth
1/2 to 1 tsp. 1/4 to 1/2 tsp. Seasoned salt or salt-free seasoning blend
1/2 to 1 tsp. 1/4 to 1/2 tsp. Ground cumin
1/4 to 1/2 1/8 to 1/4 tsp. Garlic powder
1/4 to 1/2 1/8 to 1/4 tsp. Cajun seasoning
1/4 to 1/2 1/8 to 1/4 tsp. Lemon-pepper seasoning
1/4 tsp. 1/8 tsp. Crushed red pepper flakes
1/4 tsp. 1/8 tsp. Pepper
1/4 tsp. 1/8 tsp. Hot pepper sauce
Additional ingredients (for each batch): to add to soup base that had been frozen
2 cups 1 cup Half-and-half cream or skim milk
Garnish –optional garnish-opt. Shredded cheddar cheese

In a large saucepan or Dutch oven, combine the first 14 ingredients. Bring to a boil. Reduce heat, cover and simmer for 20 minutes or until vegetables are tender.

Cool. Process in small batches in a blender until smooth.

Freeze in 2-cup portions in freezer containers. May be frozen up to 3 months.

Yield: 4 batches (8 cups total).

To prepare soup:
Thaw soup base in the refrigerator. Transfer to a saucepan; stir in cream and heat through. Sprinkle with cheese if desired.

Yield: 4 servings per batch (“Recipe” amounts)

Nutritional Analysis:
One 1-cup serving (prepared with low-sodium broth, salt-free seasoning, salt-free lemon-pepper and skim milk and served without cheese) equals 76 calories, 129 mg sodium, 3 mg cholesterol, 12 gm carbohydrate, 7 gm protein, 1 gm fat.

Cauliflower Salad for Two or Eight

CAULIFLOWER SALAD FOR TWO or EIGHT

8 Servings 2 Servings

1 large or 2 small 1/2 small head Cauliflower, chopped
8 Tbl. 2 Tbl. Chopped green pepper
8 Tbl. 2 Tbl. Chopped, peeled carrot
8 Tbl. 2 Tbl. Chopped onion
2 cups 1/2 cup Mayonnaise
To taste To taste Seasoned salt
To taste To taste Pepper (black)
Optional:
Milk as desired to blend with dressing.

Combine cauliflower, green pepper, carrot, onion.

Combine mayonnaise and seasoned salt and pepper (and milk if using it) in a bowl.

Add dressing to vegetables and toss to mix.

Chill until serving time.

Yield: 8 servings or 2 servings
