CHOCOLATE POTATO DROP COOKIES

1 cup Firmly packed light brown sugar
½ cup Butter softened
1 teaspoon Vanilla extract
1 Egg
2 cups All-purpose flour
½ teaspoon Salt
½ teaspoon Baking soda
½ cup Mashed potatoes, chilled
¾ cup Buttermilk
2 squares (1 oz. each) Unsweetened chocolate, melted
½ cup Chopped nuts
Optional Confectioners (powdered) sugar for topping

Preheat oven to 375°F.

Cream sugar, butter, and vanilla in large bowl with electric mixer until fluffy. Add egg; beat well.

Combine flour, salt, and baking soda in separate bowl; set aside.

Beat potatoes into creamed mixture.

Alternately beat in dry ingredients and milk. Add chocolate; blend well. Stir in nuts.

Drop by large tablespoonfuls onto ungreased baking sheet.

Bake 12 to 13 minutes.

Remove from baking sheet to cool

Dust with confectioners sugar, if desired.

Yield: 4 1/2 dozen cookies
