Sunny Spinach Dip


1 (16oz.) container Low-fat sour cream
1 (10oz.) pkg. Frozen chopped spinach, thawed and *well drained
1/4 cup Chopped red pepper
1/4 cup Chopped scallions
1 clove Garlic, crushed
1/8 teaspoon Liquid hot pepper seasoning

Crackers to serve dip with

In medium bowl, mix all ingredients until well blended.  Cover and chill until ready to serve.

Serve as a dip with crackers.

* A ricer is best to use to squeeze out the moisture from the spinach.
