Mushrooms Stuffed with Feta Cheese and Garlic

MUSHROOMS STUFFED WITH FETA CHEESE AND GARLIC

1 lb. Medium large mushrooms
Basting Melted butter
8 oz. Feta cheese, mashed
1/2 cup Cream cheese, softened
1/2 cup Grated parmesan cheese
1/2 cup *Chopped green onions (scallions)
1/4 cup Finely chopped parsley
1 Egg
1/2 cup *Garlic croutons, crushed into crumbs

Clean and remove stems of mushrooms and baste mushrooms with melted butter.

Combine all ingredients except for the mushrooms and stir until mixture is well blended.

Fill the mushrooms with the mixture, mounding the mixture high into the caps.

Bake in 350ºF oven until hot (about 10minutees).

Then broil for a few seconds or until lightly browned.

40 minutes total (20 minutes prep time)

Yield: 6 servings as an appetizer

*NOTE: Scallions and garlic croutons may be omitted and instead use 1 teaspoon of garlic powder.

Eggplant Parmesan

EGGPLANT PARMESAN

1 stick Butter or margarine
1/4 cup Chopped onion
2 cans (8 oz. ea.) Tomato sauce
1/2 tsp. Oregano leaves, crushed
1/2 tsp. Salt
1 large (1 1/2 lb.) Eggplant, peeled and cut into 1/2-inch slices
1lb. Low fat mozzarellas cheese, thinly sliced
3 tsp. Grated Parmesan cheese
2 quart casserole
skillet

Melt 1 tablespoon margarine or butter in saucepan (fry pan).

Sauté onion in margarine or butter until tender.

Stir in tomato sauce, oregano, and salt; simmer 5 minutes, stirring occasionally. Set aside.

Brown eggplant slices in remaining margarine or butter.

Spread 1/4 cup prepared tomato sauce in bottom of shallow 2-quart casserole.

Place half the eggplant slices in casserole, top with half of the remaining tomato sauce, sprinkle with 1 1/2 teaspoons Parmesan cheese, and top with half of mozzarella cheese slices.

Repeat with remaining ingredients. Bake in preheated 375°F oven for 30 minutes or until bubbly and cheese on top is golden brown.

Game Hens (or Chicken) with Spinach-Sage Stuffing

3 bunches Fresh spinach (about 2 1/2 lbs.) stems removed
1/4 cup Finely chopped leek
4 Tarragon sprigs or 4 teaspoons dried tarragon
1 small Garlic clove
1 cup (2 sticks) Butter
To taste Salt
To taste Freshly gorund white pepper
6 Cornish game hens or 1 fryer (chicken), depending on size of the chicken
3 Lemons, quartered (remove peel in fine julienne slices)
12 Fresh sage leaves
1/2 cup Dry vermouth
To taste Salt
To taste Freshly ground white pepper

Wash spinach thoroughly. Shake to remove excess water. Transfer to 5 to 6-quart saucepan or Dutch oven and cook over low heat until wilted, stirring occasionally, about 4 to 5 minutes. Drain thoroughly.
Combine leek, tarragon and garlic in processor or blender in batches and puree. Add butter and spinach and puree again. Season with salt and white pepper.

Preheat oven to 450 degrees. Stuff each hen (or the chicken) with 2 lemon quarters and 2 sage leaves (chicken all of lemon and sage). Starting at the neck cavity, carefully,separate the skin from the breast using your fingers, being careful not to tear skin. Spoon spinach mixture between skin and meat, pressing gently to distribute evenly. Arrange game hens (chicken) breast side up, in shallow large pan. Pour in vermouth. Sprinkle lemon julienne over top. Sprinkle with salt and white pepper to taste. Roast 10 minutes. Baste hens with pan juices. Reduce oven temperature to 350F. Continue roasting, basting frequently, until skin is crisp, juices run clear when bird(s) is pricked with fork and meat thermometer inserted in thickest part of meat without touching bone registers 180 degrees, about 20 to 30 minutes (chicken about 1 hour). Arrange hens (chicken) on serving platter; spoon pan juices over bird(s).

TRIFLE FOR TWO

1 pkg. (3 oz.) Cream cheese, softened
4 tsp. Instant cappuccino powder or other flavored sweetened instant coffee powder
2 tsps. Sugar
1 cup Whipped topping (like Cool Whip)
2 slices* Pound cake, cut into cubes
1/4 cup Semisweet chocolate chips
Optional: Additional whipped topping and chocolate chips,
2 Dessert dishes

*Pound cake can be purchased by the slice in a Deli salad bar

In a mixing bowl, beat cream cheese, coffee powder and sugar until smooth.

Beat in whipped topping until blended.

Divide cake cubes between two dessert dishes; top with cream cheese mixture and chocolate chips.

Garnish with additional whipped topping and chocolate chips if desired.

PIZZA PANCAKES

PIZZA PANCAKES

Prep time: 20 minutes
Cook time: 10 minutes
Total Time: 30 minutes

1/2 RECIPE RECIPE
1 cup 2 cups Biscuit/baking mix (like Jiffy or Bisquick)
1 tsp 2 tsp. Italian seasoning
1 2 Eggs
1/2 cup 1 cup Milk
1/4 cup 1/2 cup Shredded part-skim mozzarella cheese
1/4 cup 1/2 cup Chopped pepperoni
1/2 cup 1/2 cup Chopped plum (Roma) tomatoes
2 Tbl. 1/4 cup Chopped green pepper
1 can (8 oz.) 1 can (8 oz.) Pizza sauce, warmed
Electric frying pan
Spray vegetable oil
Toothpicks for dipping

In a large bowl, combine the biscuit mix and Italian seasoning. Combine eggs and milk; stir into dry ingredients just until moistened. Do not try to get all lumps out.

Fold in cheese, pepperoni, tomatoes and green pepper.

Pour batter by 1/4 cupfuls onto a lightly greased hot griddle.

Turn when bubbles form on top; cook until the second side is golden brown.

For snacks (and in class), cut into fourths and serve with a toothpick for easy dipping.

Serve with pizza sauce.

Yield: 14 pancakes (full recipe 28 pancakes)

SAVE THE DAY SOUP – Make ahead and freeze if desired

SAVE-THE-DAY SOUP

RECIPE 1/2 RECIPE
6 cups 3 cups Chopped broccoli
6 cups 3 cups Chopped cauliflower
4 2 Celery ribs with leaves, cut into 1-inch pieces
3 1 1/2 Medium carrots, cut into chunks
1 1/2 Medium onion, cut into chunks
2 cans (14 1/2 oz. each) 1 can Chicken broth
1/2 to 1 tsp. 1/4 to 1/2 tsp. Seasoned salt or salt-free seasoning blend
1/2 to 1 tsp. 1/4 to 1/2 tsp. Ground cumin
1/4 to 1/2 1/8 to 1/4 tsp. Garlic powder
1/4 to 1/2 1/8 to 1/4 tsp. Cajun seasoning
1/4 to 1/2 1/8 to 1/4 tsp. Lemon-pepper seasoning
1/4 tsp. 1/8 tsp. Crushed red pepper flakes
1/4 tsp. 1/8 tsp. Pepper
1/4 tsp. 1/8 tsp. Hot pepper sauce
Additional ingredients (for each batch): to add to soup base that had been frozen
2 cups 1 cup Half-and-half cream or skim milk
Garnish –optional garnish-opt. Shredded cheddar cheese

In a large saucepan or Dutch oven, combine the first 14 ingredients. Bring to a boil. Reduce heat, cover and simmer for 20 minutes or until vegetables are tender.

Cool. Process in small batches in a blender until smooth.

Freeze in 2-cup portions in freezer containers. May be frozen up to 3 months.

Yield: 4 batches (8 cups total).

To prepare soup:
Thaw soup base in the refrigerator. Transfer to a saucepan; stir in cream and heat through. Sprinkle with cheese if desired.

Yield: 4 servings per batch (“Recipe” amounts)

Nutritional Analysis:
One 1-cup serving (prepared with low-sodium broth, salt-free seasoning, salt-free lemon-pepper and skim milk and served without cheese) equals 76 calories, 129 mg sodium, 3 mg cholesterol, 12 gm carbohydrate, 7 gm protein, 1 gm fat.

Pretzel Yums

PRETZEL YUMS

1pkg. Round or small knotted pretzels
1 pkg. Hershey’s hugs
1 pkg. M&M’s
Wax paper
Place wax paper on a cookie sheet. Put the pretzels on top of the wax paper. Put hugs inside pretzels. Bake 2 minutes at 200°F until hug is soft. Put M&M’s on each hug. Put in freezer until hard, peel off of wax paper and enjoy.
