SAVORY ITALIAN ROUNDS

2/3 cup Grated Parmesan cheese
1/2 cup Mayonnaise (not light or fat-free)
1/4 tsp. Dried basil
1/8 tsp. Garlic powder
1/8 tsp. Garlic salt
1/8 tsp. Dried oregano
Dash Onion salt
1 tube (12 oz.) Refrigerated buttermilk biscuits
2 Baking sheets

In a small bowl, combine the first seven ingredients.

Separate biscuits and place on two ungreased baking sheets. Let stand for 5 minutes.

Flatten biscuits into 4-inch circles.

Spread about 1 tablespoon mayonnaise mixture over each circle to within 1/2 inch of edge.

Bake at 400° for 10-13 minutes or until golden brown.

Serve immediately.

Yield: 10 servings

APPLE GRAPE SALAD WITH PEACH YOGURT DRESSING

1 tsp. Honey
1 Tbl. Lemon juice
2 large Apples, cored and diced
6 oz. Fat-free peach yogurt
1/4 cup Fat-free mayonnaise
1/4 tsp. Allspice
1/8 tsp. Nutmeg
1 stalk Celery, diced
2 cups (1#) Fresh seedless purple grapes.

In a large bowl, mix yogurt, mayonnaise, allspice, and nutmeg.

Add dressing to apples.

Stir in celery and grapes.

Cover and chill.

Yield: 8 servings

Dilly Tomato Soup

DILLY TOMATO SOUP

Prep/Total Time: 20 minutes

ONE SERVING TWO SERVINGS
1/2 small 1 small Onion, thinly sliced
1/8 teaspoon 1/4 teaspoon Minced garlic
1 1/2 teaspoons 1 Tablespoon Canola oil
1/2 teaspoon 1 teaspoon Butter
1 medium 2 medium Tomatoes, sliced
1/2 teaspoon 1 teaspoon Sugar
1/8 teaspoon 1/4 teaspoon Salt
Smidgeon Dash Pepper
2 Tbl. + 2 tsp. 1/3 cup Tomato paste
1 Tablespoon 2 Tablespoons All-purpose flour
1/2 cup + 1 Tbl. 1 1/4 cups Cold water, divided
2 Tbl. + 2 tsp. 1/3 cup Fat-free half-and-half
1/2 to 1 tsp. 1 to 2 tsp. Minced fresh dill
Foley mill

In a small saucepan, cook onion and garlic in oil and butter over low heat until tender. Add the tomatoes, sugar, salt and pepper; cook over medium-high heat for 3 minutes. Remove from the heat; stir in tomato paste. Combine flour and 1/4 cup water until smooth; stir into tomato mixture. Gradually stir in remaining water until smooth. Bring to a boil; cook and stir for 2 minutes.

Place a sieve over a bowl; pour tomato mixture into sieve. Press with the back of a spoon (or use Foley mill) to remove tomato seeds and skin. Return puree to pan. Add half-and-half and dill; cook over low heat just until heated through (do not boil).

Yield: 1 or 2 servings

Nutritional Analysis: One serving: 1 cup equals 224 calories, 10 g fat (2 g saturated fat), 5 mg cholesterol, 393 mg sodium, 30 g carbohydrate, 4 g fiber, 5 g protein.

Diabetic Exchanges: 2 vegetable, 2 fat, 1 starch

Feta Fruit Salad

FETA FRUIT SALAD

Yield: 5 servings

1 (6oz.) container President crumbled fat free feta cheese
4 oz. (handful) Seedless green grapes or red grapes, washed, and cut into halves
4 oz. Pecans (chopped or whole-out of the shell)
2 Apples (red, with skins left on) cored and sliced
1 (8oz.) can Mandarin oranges, drained
or
1 large Orange, peeled, sectioned, seeds removed, cut into pieces
1/4 cup Skim milk
1 ½ Tbl. Granulated sugar
1/2 cup Reduced fat dressing or mayonnaise
1 bunch Bib lettuce to be used for serving

Combine cheese, grapes, pecans, apples, and oranges in a bowl.

In another bowl, combine milk, sugar and mayonnaise to create a dressing. Add the dressing to the first (fruit, cheese and nut) mixture and mix lightly.

Line bowl or dishes with bib lettuce and fill with salad.

For good eye appeal, coat the top edges of the dishes or bowl with syrup and coarse granulated sugar.

Salmon Cheese Spread

SALMON CHEESE SPREAD

1 pkg. (3 oz.) Cream cheese, softened
1 can (7 1/2 oz.) Salmon, drained, bones and skin removed
1/3 cup Shredded cheddar cheese
1/4 cup Sweet pickle relish
As desired Bread or crackers

In a bowl, combine the first four ingredients.

Use as a sandwich spread or serve on crackers.

Yield: 1 cup

Kohlrabi and Carrot Salad

2 cups Grated kohlrabi
1 cup Grated carrots
2 Medium apples, coarsely grated
2 stalks Celery, sliced thinly
1 cup Plain yhogurt or sour cream
1 Tbl. Honey
Juice of 1/2 Lemon
To taste White pepper
To taste Salt
2 Tbl. Toasted sesame or poppy seeds

Peel and grate kohlrabi, carrots and apples. Combine in a bowl with celery,. Mix yogurt, honey, lemon juice and seasoning together. Pour over salad. Mix well and chill.

Yield: 4 to 6 servings

Variations:
Add 3/4 cup Fresh pineapple chunks
Add 1/4 cup White raisins or both raisins and pineapple chunks

Kohlrabi with Dilled Cheese Sauce

3 cups Diced or cubed kohlrabi (4 to 5 mediium)

Dilled Cheese Sauce
1 Tbl. Butter or margarine
1 Tbl. Flour
1 cup Milk
2/3 cup Grated Cheddar or American cheese
1 Tbl. Fresh lemon juice
1 Tbl. Fresh minced dill
To taste Salt
To taste Pepper (white)

Peel kohlrabi, cut into cubes and steam or cook in a little water until fork tender; drain. Place in serving bowl, and pour over cheese sauce.

Melt margaine or butter in saucepan, add flour and cook for 1 minute. Remove from heat and gradually add milk, stirring constantly to prevent lumping. Return to heat and cook until mixture thickens. Add cheese, lemon juice, dill and seasonings, stirring well. Pour over kohlrabi and serve.

Garnish wth fresh dill if you wish.
Yield: 4 to 6 servings

Picante Salsa

PICANTE SALSA

1/2 cup Onion — chopped
1 cup Tomatillos or tomatoes — chopped
1/2 cup Bell pepper or annaheim chilies — chopped
*1 whole Jalapeno — finely chopped
2 Tbl. Cider vinegar
Pinch Sea salt
2 Tbl. Vegetable oil
1 tsp. Sugar
1 tsp. Fresh cilantro — chopped
*Up to 3 jalepenos may be used according to taste.

Combine all the ingredients in a jar and refrigerate.

It will keep indefinitely or can be frozen.

Easy Holiday Cooking by Kids

Be ready to help prepare holiday meals by making Holiday Surprise Salad, Cheesy Potatoes, Chocolate Pizza Dessert and more that are simple and tasty. You will practice making and tasting these goodies to serve your family for the holidays.

Food, supplies and equipment are provided. Just bring your appetite. Classes are hands-on. Participants will receive a folder of recipes and other information to take home. No experience is necessary.
