Double Chocolate Bars

DOUBLE CHOCOLATE BARS

1 pkg. (16 oz.) Cream-filled chocolate sandwich cookies, crushed (like Oreos)
3/4 cup (1 1/2 sticks) Butter or margarine, melted
1 can (14 oz.) Sweetened condensed milk
2 cups (12 oz.) Miniature semisweet chocolate chips, divided

Combine cookie crumbs and butter; pat onto the bottom of an ungreased 13-in x 9-inch x 2-inch baking pan.

Combine milk and 1 cup of chocolate chips in a microwave-safe bowl. Cover and microwave on high for 1 minute or until chips are melted; stir until smooth.

Pour over the crust.

Sprinkle with remaining chips.

Bake at 350º for 10 – 12 minutes or until the chips are melted.

Cool. These bars are very rich, so cut them into bite-size pieces.

Yield: About 4 dozen.

Instant Lasagna for One

Soak 2 precooked instant lasagna noodles in cold water for 10 minutes, drain. Using 1/2 cup ricotta cheese and 2 tablespoons shredded mozzarella cheese, place cheese down center of each noodle; roll. Place rolls, seam-side down, in small shallow casserole or on dinner plate. Top casserole with 1/4 cup bottled spaghetti sauce and 2 tablespoons shredded mozzarella cheese. Cook, covered with waxed paper, on High 2 to 3 minutes until hot and melted. Let stand 2 minutes.
Yield: 1 serving

About 565 calories, 26g fat, 84mg cholesterol, 520 mg sodium

Quick Cashew Rice for 2

1/2 cup Long-grain white rice
2 teaspoons Canola oil
To taste Salt and freshly ground pepper
1/4 cup Cashews

Bring 2 to 3 quarts water to boil in large saucepan (kettle). Add rice and boil, uncovered, about 10 minutes. Test a grain; rice should be cooked through but not soft. Drain into colander. Return rice to saucepan and mix in oil and salt and pepper to taste. Sprinkle with cashew nuts.

Makes 2 servings.

Per serving: 307 calories, 42.6g carbohydrates, 5.9g protein, 12.7g total fat (2.3g saturated). no cholesterol, 1.1g fiber, 5mg sodium. Calories from fat: 37%.

Fettuccine Alfredo for 2

1/3 cup (1/2 stick) Unsalted butter
1 cup Whipping cream
Pinch of Freshly grated nutmeg
3/4 to 1 pound Fresh fettuccine
1/4 cup Freshly grated Parmesan cheese
To taste Salt and freshly ground pepper
2 Tablespoons Minced fresh Italian parsley

In a 10-inch saute pan, combine butter, cream and nutmeg. Bring to a boil over high heat; then reduce to simmer and cook 5 minutes or until cream reduces slightly.

Meanwhile cook fettuccine in boiling salted water until al dente, about 3 minutes. Drain pasta and add it to saute pan along with Parmesan cheese, salt and pepper; toss well. Serve in heated pasta bowls or on plates and sprinkle with parsley. Pass additional grated Parmesan cheese.

Makes 2 generous servings.

No-Bake Fudgy Oat Cookies yield about 1 1/2 dozen

1 cup +2 Tablespoon Quick-cooking oats
1/2 cup Flaked coconut
1/4 cup Milk
2 Tablespoon Butter
1 cup Sugar (granulated)
1/4 cup Baking cocoa
1/2 teaspoon Vanilla extract

In a large bowl, combine oats and coconut; set aside. In a saucepan, combine milk and butter. Stir in sugar and cocoa; mix well. Bring to a boil. Add oat mixture; cook for 1 minute, stirring constantly. Remove from the heat; stir in vanilla.

Drop by rounded tablespoonfuls 1 inch apart5 onto waxed paper. Let stand until set.

Yield: 1 1/2 dozen

Berry Bliss Cake

3/4 cup Cold milk
1 pkg. (4-serving size) Vanilla flavor instant pudding & pie filling
1 1/2 cup Thawed whipped topping (Cool Whip), divided
2 cups Mixed raspberries and sliced strawberries
1/4 cup Blackberries
1 pkg. (10.75 oz.) Frozen pound cake
1/4 cup Orange juice

Beat milk and dry pudding mix (or shake in covered bowl) for 2 minutes or until well blended. Stir in 1 cup of the whipped topping. Combine berries.

Cut cake into three layers; brush with juice. Reserve 1/2 cup of berries. Stack cake layers on serving plate, filling each layer with half each of the pudding mixture and remaining berries. Top with remaining whipped topping and reserved berries. Cover loosely with foil.

Refrigerate at least 4 hours or up to 24 hours. Store leftovers in refrigerator.

Makes 8 servings.

Sweet Potato Oven Fries

SWEET POTATO OVEN FRIES

2 medium Sweet potatoes (12 oz. total), peeled
1 Tbl. plus 1 tsp. Olive or canola oil
1/2 tsp. Paprika
1/4 tsp. Garlic powder
1/4 tsp. Salt
1/4 tsp. Pepper

Heat oven to 450°F.

Spray a baking sheet with nonstick cooking spray.

Cut sweet potatoes into French fries (about 3″ long and 1/4″ thick), place in a large bowl and toss with oil, paprika, garlic powder, salt, and pepper.

Arrange sweet potatoes in a single layer on prepared baking sheet.

Roast for about 18 minutes, turning once, until lightly browned and tender.

Serve immediately.

FAVORITE PANCAKES FOR ONE OR TWO – MAPLE SYRUP – HONEY BUTTER

FAVORITE PANCAKES FOR ONE OR TWO

2/3 cup Sifted all-purpose flour
1 1/2 tsp. Baking powder
1 1/2 tsp. Sugar
1/4 tsp. Salt
1 Beaten egg
1/2 cup Milk
1 Tbl. Vegetable oil

Sift together dry ingredients. Combine egg, milk, and oil; add to dry ingredients, stirring just until moistened.

Bake on hot, lightly greased griddle.

Yield: four 4-inch pancakes

MAPLE SYRUP

1 cup Light corn syrup*
1/4 cup Water
Few Drops Maple flavoring
Optional:
1 Tbl. Butter
As desired Cornstarch

Combine 1 cup light (clear or sometimes called white) corn syrup, 1/2 cup brown sugar, and 1/4 cup water; cook and stir until sugar dissolves. Add a few drops (or as desired) maple flavoring and 1 tablespoon butter. (*If you don’t have light, you can substitute with dark syrup.) I store it in the Tupperware sweet saver. A Pyrex measuring cup with a pour spout is great to heat it in and serve from, because it has a lip to pour off of, a handle to hold the hot pitcher.
(To make it thicker, mix cornstarch with cold water and add to hot syrup and cook until thickened to desired consistency. – Best used immediately not left over if thickened this way.)

I don’t use the butter because it hardens in the refrigerator unless I am serving it hot.

Store syrup in the refrigerator if kept for a long time. Good served hot over pancakes, French toast, etc., cold over ice cream, spice cakes, etc.

HONEY BUTTER

Gradually add 1/4 cup honey to whipped butter (1/2 cup/1/4 pound whipped until fluffy), beating until smooth. If desired, add 2 teaspoons grated orange peel.
