Pumpkin Rondele Dessert

1 tub Pumpkin Rondele Spreadable cheese
approximately 1/4 (8 oz.) tub Cool Whip whipped dessert topping
approximately 1 teaspoon Pumpkin pie spice
approximately 1/2 cup Chopped pecans
As desired Good quality cinnamon graham crackers
or
As desired Nabisco Famous Chocolate cookies (flat, round and have no filling)

Spread Rondele on a plate or in a pie pan (9 or 10 inch-standard-not deep pan)
Spread whipped topping over Rondele, as desired.
Sprinkle pumpkin pie spice over the whipped topping.
Sprinkle pecans over spice.
Serve with a spoon or cheese spreader.
Place crackers or cookies in a basket next to the dessert plate and be ready for compliments.

Peanut Popcorn Balls

PEANUT-POPCORN BALLS

Microwave Time: 1 to 2 minutes
Stand Time: 35 minutes

1/4 cup Packed brown sugar
1/4 cup Corn syrup
2 Tbl. Creamy peanut butter
Dash` Salt
4 cups Popped popcorn (about 1/4 cup unpopped)
1/2 cup Salted peanuts
Waxed paper

Mix brown sugar, corn syrup, peanut butter and salt in large bowl. Microwave uncovered on high 1 minute or 1minute 30 seconds or until mixture begins to bubble; stir.

Stir in popcorn and peanuts until well coated.

Let stand 5 minutes.

Shape mixture firmly into small balls with hands dipped in cold water. Place on waxed paper; let stand about 30 minutes or until completely cool.

Wrap in plastic wrap.

Yield: depends on size of balls

310 calories per popcorn ball if made into 4 balls

No Guilt Chocolate Brownies (these are wonderful)

NO-GUILT CHOCOLATE BROWNIES

1 cup Semisweet chocolate chips
1/4 cup Packed brown sugar
2 Tablespoons Granulated sugar
1/2 teaspoon Baking powder
1/4 teaspoon Salt
1/2 cup Cholesterol free egg substitute
1 jar (2 1//2 oz.) First-stage baby food prunes
1 teaspoon Vanilla
1 cup Uncooked rolled oats
1/3 cup Nonfat dry milk solids
1/4 cup *Wheat germ
2 teaspoons Powdered sugar
*Wheat Germ: I use Kretchmers honey toasted version (cereal isle of store)

Preheat oven to 350ºF. Spray 8-inch square baking pan with nonstick cooking spray; set aside.

Melt chips in top of double boiler over simmering water.

Combine brown and granulated sugars, baking powder and salt in large bowl with electric mixer. Add egg substitute, prunes and vanilla. Beat at medium speed until well blended. Stir in oats, milk solids, wheat germ and chocolate. Pour batter into prepared pan.

Bake 30 minutes or until wooden pick inserted in center comes out clean.

Cool completely.

Cut into 2-inch squares. Dust with powdered sugar before serving.

Yield: 16 servings

Quick and Easy Pumpkin Dessert

1 can (29oz.) Pumpkin pie filling
4 Eggs (large size), slightly beaten
1 1/2 cups Granulated sugar
12 oz. Low-fat evaporated milk
3 teaspoons Pumpkin pie spice
1 box Spice cake mix (box that makes 9×13 pan size cake)
1/2 to 3/4 cup Chopped pecans (choppped into small pieces)
1 or 2 sticks Butter, melted (original recipe calls for 2 sticks, but you can reduce amount)

Grease 9×13 pan. Preheat oven to 350 degrees.

Combine pumpkin pie mix and eggs, add sugar, milk and spice. Mix well.

Place in pan and sprinkle dry mix over top of pie mixture. Sprinkle nuts over dry cake mix, and drizzle butter over the contents in the pan (peacans). Bake approx. 35 minutes.

Top with whipped cream or whipped topping or serve with ice cream if desired.

Note: layer dessert as follows:
bottom layer: pie mix, eggs, sugar, milk, spice
next layer: dry cake mix sprinkled across
next layer: pecans sprinkled across
top layer: melted butter drizzled

MOM’S FAVORITE SWEET POTATOES

MOM’S FAVORITE SWEET POTATOES

3 to 4 servings 6 to 8 servings
2 cups 4 cups Cooked, mashed sweet potatoes (3 medium-large potatoes)
1 1/2 Tbls. 3 Tbls. Brown sugar
1 Tbl. 2 Tbls. Honey
1/2 small can 1 small can Crushed pineapple, drained
2 1/2 Tbls. 5 Tbls. Sweet cream* (whipping cream)*
2 Tbls. 1/4 cup Butter
1/4 cup 1/2 cup Chopped pecans
As desired As desired Marshmallows for topping

Topping per below
1 Tbl. 2 Tbl. Butter
1 Tbl. 2 Tbl. Brown sugar
1/4 cup 1/2 cup Crushed Rice Chex
1 1/2 Tbls. 3 Tbl. Finely chopped nuts

*Tip: Evaporated Milk can be used instead of the sweet cream or whipping cream

Combine mashed sweet potatoes with remaining ingredients, except marshmallows, and put into a buttered 2-quart (for 3 to 4 servings: 1 quart) casserole dish. Top with marshmallows and bake in 350 degree (F.) Bake in oven until marshmallows are lightly browned.

Variation: (for 3 to 4 servings: make 1/2 of this topping)
In place of marshmallows, melt 2 tablespoons butter in a skillet, add 2 tablespoons brown sugar, 1/2 cup crushed Rice Chex and 3 Tablespoons finely chopped nuts. Blend well and sprinkle over top before baking.

Yield: Yield: 3 to 4 servings or 6 to 8 Servings

CRANBERRY CHUTNEY WITH BRIE

CRANBERRY CHUTNEY WITH BRIE
* refers to quick method below

2 c. *Fresh cranberries
1 1/3 c. *Sugar
2/3 c. Vinegar
4 T. *Water
4 t. Chopped fresh ginger root = 1 tsp. dry
1/2 t. Cinnamon
1/4 t. Ground cloves
2 (8″) Round brie
Optional: Sliced almonds for garnish

*Substitute cranberries, sugar and water (above) with canned whole berry sauce with 1 can sauce.

Combine cranberries, sugar, vinegar, water, gingerroot, cinnamon and cloves in a 1 qt. saucepan. (quick method – combine canned cranberry sauce, dry ginger, cinnamon and cloves).

Heat until boiling, reduce heat and continue to cook 20 minutes (quick method-heat only until heated thru), stirring frequently, until thick (quick method – until heated thru).

Cool slightly and refrigerate.

When ready to serve bring chutney to room temperature.

This is enough chutney for 2 (8 inch) brie.

Warm brie in a 350°F. oven 8-10 minutes until soft and partially melted.

Place brie on serving dish (rind may be left on the brie for serving and eating) and top with chutney (and sliced almonds if desired).

Serve with crackers.

Add Cookie Baking Space

When making a big batch of cookies or other goodies, double the work space in your kitchen by fully opening all the drawers and laying cookie sheets across the sides.

This way, the table remains clear for rolling, cutting and shaping dough. You can have cookie sheets ready to pop into the oven as soon as the previous ones are ready to come out.

Chicken A La King For One Or Two

CHICKEN A LA KING
FOR 1

2 Servings One Serving
2 Tbl. 1 Tbl. Butter
1/2 cup 1/4 cup Mushrooms
2 Tbl. 1 Tbl. Flour
1 cup 1/2 cup Chicken broth
1 cup 1/2 to 2/3 cup Cooked chicken
1/2 cup 1/4 cup Pimientos, diced
2 1 Egg yolk
2 Tbl. 1 Tbl. Sherry
To taste To taste Salt
To taste To taste Pepper
To serve as base Cooked noodles

Melt the butter in a small casserole and sauté the mushrooms for 1 minute. Remove the mushrooms. Now stir the flour into the butter in the casserole and gradually add the chicken broth. Continue stirring until the sauce is smooth.

Add the chicken, pimientos, and mushrooms to the sauce and keep it warm.

Cook noodles or make toast to serve as a base for this dish.

At serving time, heat the casserole thoroughly and stir in the egg yolk, sherry and season as necessary.

Serve on top of pasta or toast if desired.

Serve immediately.

Double Chocolate Bars

DOUBLE CHOCOLATE BARS

1 pkg. (16 oz.) Cream-filled chocolate sandwich cookies, crushed (like Oreos)
3/4 cup (1 1/2 sticks) Butter or margarine, melted
1 can (14 oz.) Sweetened condensed milk
2 cups (12 oz.) Miniature semisweet chocolate chips, divided

Combine cookie crumbs and butter; pat onto the bottom of an ungreased 13-in x 9-inch x 2-inch baking pan.

Combine milk and 1 cup of chocolate chips in a microwave-safe bowl. Cover and microwave on high for 1 minute or until chips are melted; stir until smooth.

Pour over the crust.

Sprinkle with remaining chips.

Bake at 350º for 10 – 12 minutes or until the chips are melted.

Cool. These bars are very rich, so cut them into bite-size pieces.

Yield: About 4 dozen.

SPINACH BARS

SPINACH BARS
They are fabulous as an appetizer or brunch item.

1 Tbl. Butter or margarine
1 medium Onion, finely chopped
2 cloves Garlic minced
2 Eggs
1/2 cup Flour
1/2 tsp. Baking powder
1/3 cup Milk
1/2 tsp. Salt
1/2 tsp. Oregano
1/8 tsp. Thyme
1/8 tsp. Marjoram
10 oz. Frozen chopped spinach, thawed and squeezed dry (ricer works best for this)
2 cups Grated low-fat Monterey Jack or cheddar cheese, divided
Ricer
8×8” baking pan

Preheat oven to 325°. Grease an 8×8” baking pan.

In a small skillet, melt butter. Cook onions over medium heat until translucent. Add garlic, reduce heat and cook 1 minute. Set aside.

In a large bowl beat eggs and add flour, baking powder, milk, salt, oregano, thyme, and marjoram. Stir in dry spinach and 1 1/2 cups of the cheese. Add onion and garlic. Stir to mix well. Pour mixture in pan. Top with remaining cheese.

At this point it can be covered and stored in the refrigerator.

Bake 30 to 40 minutes or until knife inserted near the middle comes out clean. (It will take longer to bake if it‘s been refrigerated.) Cut into 16 small squares for an appetizer (2 squares per serving).

Note: These can be made ahead and served in small squares for an appetizer or served in larger portions for a meatless meal.

Yield: 8 servings if used for appetizers
